Whole Food Plant-Based Apple Cinnamon Cake

This recipe is easy and delicious. Eat this for breakfast, a snack or for dessert.

Ingredients:
2 cups whole wheat pastry flour
1 cup spelt flour
2 tsp. cinnamon
1 tsp nutmeg
1 tsp baking powder
½ tsp baking soda
½ cup of unsweetened applesauce
½ cup of light brown sugar
¼ cup of raw sugar
2 tsp of vanilla extract
1 cup of unsweetened plant-based milk
½ cup mashed avocado
2 whole apples, diced
1 whole, thinly sliced
Directions:
Preheat the oven to 350 degrees fahrenheit.
Toss the diced apples with 1 tsp. Cinnamon and set aside.
In a large bowl, whisk together the flour, 1 tsp of cinnamon, baking soda and baking powder.
Add the applesauce, sugars, vanilla, plant-based milk. Mix until almost combined, then add the diced apples. Continue to mix until well-combined.
Pour the batter into a glass or silicone baking pan and use a spatula to evenly distribute. Arrange the apple slices over the top– overlapping is okay.
Bake for 60 mins, and let cool before serving and enjoy!
